This wine achieved a silver medal in 2006 due to the ideal topographic and climatic conditions. Very pale green in colour, it is a crisp, elegant, fresh and fruit driven wine with great depth of flavour. The palate bursts with big grapefruit and citric flavours balanced perfectly with grassy undertones, and a long finish

Spicy fruit tones and overwhelming passionfruit and guava aromas.
FOOD

WINE
This wine is a multiple gold medal winner and the signature wine at CTH. It is starting to display all the characteristics of a premium aged Riesling, with a deep golden hue and a complex, almost creamy palate of toasty lemon butter, yet still displaying those same citrus and floral notes of its younger years. There is a level of acidity typical of its varietal concealed subtely by the fruit sweetness and overall perfect balance. This wine shows exceptional quality.
AROMAS
The nose is alive with the flavour of lemon and lime and, with a distinct flavour of roses, and has a faint aroma of kerosene synonymous with aged Rieslings
FOOD
This Riesling is intended to compliment food and would be perfect for a day by the water with a seafood picnic.
DRINK
Perfect drinking now and will cellar for six to eight years.

Vibrant greenish straw in colour, it has a fresh palate with intense long lingering citrus flavours, yet showing a delicate floral background. This wine is constructed tightly and cuts a clean line from the front to back palate.

Overwhelmingly citrus and fresh cut flowers.
FOOD
Throw some prawns on the barbie with a bottle or 2 of Cherry Tree Hill Riesling.
DRINK
Age worthy, with at least a 12 year lifespan in the bottle.

This wine is the most successful Cabernet in the Southern Highlands, showing real fruit character and complexity. Now that it has had 3 years in the bottle, along with a year in the barrel, the wine has matured into an incredibly smooth, lush, and enjoyable wine. Intense cherry and chocolate characteristics interact with a good depth of dark berry flavour and soft tannins completed with a delightful long lingering finish.
AROMAS
Intense nose of ripe blackcurrants and blackberries, with cool fruit characteristics, a hint of leafiness, yet without herbaciousness.

The 2005 Cherry Tree Hill Cabernet Sauvignon was produced from select grapes from the Sunflower Paddock at CTH, ensuring the quality of every grape pressed to bottle this indulgent wine. This exclusive vintage is a legitimate reserve wine and thus deserves the tag. Bright cherry red in colour, the palate has medium fruit weight, firm drying tannins and medium acidity. It is a medium to full bodied wine with a warm rich velvet texture. Blackberry and cherry characters nicely balance with toasty oak giving the palate length and richness.
AROMAS
Typical leafy cassis notes on the nose.
FOOD
A fine cut of fillet steak followed by cheese.
